The first vineyard to be planted on the Knights Valley Estate, Les Pavot ('The Poppies') remains the signature wine of Peter Michael. Spanning 49 acres, Les Pavots ascends to an elevation of nearly 1,400 feet. Merlot and Cabernet Franc grow on the cool upper slopes,with Cabernet Sauvignon in the warmer sections just below. Always a Cabernet Sauvignon-led Bordeaux Blend, the distinctive aromas of this exceptional wine clearly display the hillside terroir. Hand-harvested, vinified with meticulous care and aged for 18months in French oak, this stunning wine can stands shoulder-to-shoulder with the best estates of the old world.
The 2005 growing season began as a study in wildly unpredictable weather, its legacy is one of perfect ripening conditions. Winter and spring were beset with heavy rain and May brought hail. Just as every conceivable weather fluctuation had challenged the vines, sunny, warm conditions arrived, giving an extended and ideal ripening season. Conditions remained virtually perfect and resulted in a smooth harvest yielding great concentrated flavours with phenolic maturity in the red varietals. 2005 Les Pavots reveals an deep bouquet of black cherry, blackcurrant, blueberry and blackberry, with nuances of cedar, cacao, cigar box, black tea, graphite, a stylish ‘guarigue’ touch, forest fl oor, sweet vanilla and cloves. Extremely full-bodied, the mouth feel is full and round, with elegant tannins and a long finish. Complex from the very beginning, 2005 Les Pavots is now stunning in its maturity.
