Understanding the specific requirements of grapes grown for rosé, each year Seven Hills designates vineyard blocks of Bordeaux varietals specifically for their rosé program. These blocks are farmed only for rosé and are hand-picked several weeks prior to the red wine harvest. The grapes are gently destemmed and pressed with no additional skin contact, and the juice is settled, inoculated with a selection of aromatic yeast, and slowly fermented at low temperatures in stainless steel until dry. Thereafter the wine rests sur lie until bottling in early February. In the tradition of classic French rosés, this wine is delicate and refreshing, pale in colour and bone-dry. Primarily Cabernet Franc with a small amount of Petit Verdot for additional structure and Malbec for expressive fruitfulness, this wine exhibits flavours of guava, grapefruit and papaya along with fresh herbs and a hint of spice.
