Knight’s Bridge Pont de Chevalier Sauvignon Blanc is made to deliver sophistication and complexity while still retaining all the energy of this most classic varietal. The grapes are hand-picked and delicately pressed to preserve their broad range of aromatics and sense of peak freshness. Fermentation occurs in stainless steel at cold temperatures to ensure bright, varietal character, Malolactic fermentation is inhibited and the finished wine aged for six months in 85% stainless steel and 15% new French oak barrels prior to bottling. On the nose the quality is evident through bright aromas of Anjou pear and white peach with an exotic back note of mango. A light framework of French oak adds texture, layered with crisp freshness from stainless steel. Distinguished by a viscous, mouth-watering entry, the interplay of citrus, Anjou pear and white fig flavors are seamlessly woven toward a focused yet lively finish. Ripe fruit flavours are refined by a persistent minerality that suggests this wine will pair seamlessly with a broad range of cuisines.
